Not only did this lemon cake look exactly as on the photos, but it tasted great!! Perfectly moist on the inside and tasting of natural lemon (not artificial, as store-bought ones often taste like). My husband loved it too!! I did bake it for 60 min instead of the 40-45 recommended in the recipe, but every oven is different. This one's definitely going to be a regular in our house.

Emilie, I love your list but was truly disappointed to see your comments. It became clear that at least for 2 recipes you had not tried them yourself. When looking for recipies, I feel infinitely better when the reviewer actually tested a few of vanilla cakes, for example and picked the best. You appear to have selected them just by liked how they looked and sounded to you.

Just wanted pitch in to say 'thank you' , Emilie. I appreciate that you've collated these ten gorgeous recipes to compare and contrast.on one lovely page. Personally; I'm finding there's zero grounds for the previous poster's complaint (let alone being "truly disappointed''! Srsly?!) seeing as reviews for these cakes are also on the links you provided to the recipe originators. I just love that you've put these cakes all on one page to mull over and plan with - and given me so much food for thought (literally!). The rest of your blog is also beautiful and a great vegan/healthy resource. I suspect the one above is actually just jealous of your popularity and success with this site, but then... haters gonna hate. Keep up the good work - thank you for doing what you do and sharing your love for food, cooking and fresh ideas with the rest of us! :)

I made the chocolate peanut butter (his choice). It turned out so good! I did a mix of coconut flour, spelt, and almond flour because I like a break from wheat. I also substituted half stevia, half brown sugar for the sugar. This recipe adapted perfectly. We had the neighbors over and it was a hit. I went a little nuts with chocolate chunks and grated chocolate on top, because chocolate. ;) I can't wait to try some more of these.

Everytime I use stevia extract, the texture is dry, doesn't rise very little, I know a bit of fiber needs to be added, applesauce, or something similar. What am I doing wrong? Aquafaba maybe? Please let me know. I am a vegan newbie, I love baking, but cakes are pretty gross. I don't have trouble with cookies,I need help with cakes. Hope you can help.

I have tried several vegan cakes ,with stevia extract instead of sugar, I know I need to add a filler, either applesauce, yogurt, or fruit juice. For some reason they end far too dense., almost ddownright gross. Usually, I don't have too much trouble with vegan cookies, with the stevia extract. Do you know how I can improve my cakes. I'd like to bake some of yours, but I'm worried that they won't be right unless I know the right ratio of stevia and filler. I hope you can help me.

FAQs

Why is my vegan cake not fluffy? ›

CAKE NOT RISING

This can be caused by a few things already mentioned such as using the wrong egg replacer or over mixing. I always recommend using fresh raising agents. Generally, baking soda and baking powder only stay active for 3 months after opening.

How healthy is vegan cake? ›

The good news is that vegan cakes don't contain cholesterol at all since plant-based foods are generally free from it. Also, if you replace butter, cream and milk with healthier ingredients such as soy or almond milk, oil and soft tofu, then you'll also considerably reduce your intake of saturated fat.

Why has my vegan cake sunk? ›

YOUR CAKE IS SINKING IN THE MIDDLE OR NOT RISING

You may not have used enough raising agents. I do recommend experimenting with double action baking powders. Otherwise try using 25 percent more chemical raising agents (baking soda or baking powder) if you're converting a recipe to gluten free. b.

Why is my vegan cake chewy? ›

After Googling I've found some things that may be the cause: Over mixed the batter (I thought I didn't but who knows) Didn't leave the milk+vinegar mixture long enough to curdle. I've also seen posts of people who recommend to add the vinegar right before your done with mixing.

What is the secret to a fluffy cake? ›

The most crucial tip? Instead of buying an entire box of cake flour, simply incorporate two tablespoons of cornstarch into 3 1/2 cups of all-purpose flour. This blocks the formation of gluten in the flour, which produces a lighter, fluffier cake.

What ingredient makes cake Fluffy? ›

Cakes and pastries are fluffy and light in nature due to the presence of baking soda in it. When baking soda is combined with both an acidic ingredient and a liquid, it becomes activated. Upon activation, Carbon dioxide is produced, which allows baked products to rise and become light and fluffy.

How long does homemade vegan cake last? ›

Storing Unfrosted and Uncut Vegan Cakes

If you have made your sponge with vegan butter it will keep in a good tasting condition for about five days. We recommend only keeping it like this for three to be on the safe side. If you have used oil in your baking this will add about two days to the shelf life.

Do vegan cakes taste different? ›

Flavor Differences

Gluten-Free bakers have different flour types to experiment with, and vegan bakers now have new alternatives to dairy products. In addition, vegan and gluten-free cakes contain way more fruits than regular cakes; this gives them a unique flavor.

Why does my vegan cake taste bitter? ›

One of the most common misfortunes among bakers is that they are using too much baking soda or baking powder. Know that too much baking soda or baking powder in cakes will not just lead to a metallic and bitter taste, but it can also make a big mess in the oven as it will rise beyond expectations.

Why is my vegan cake so dry? ›

If you think vegan baked goods are dry and crumbly, you probably haven't had one that's been made with the right fat (or the right amount of fat), according to Konya. Butter is what makes traditional baked goods so darn tasty—as well as helps keep it all together—so you can't merely eliminate it and hope for the best.

Why don t vegan cakes rise? ›

Leavening Agents: Eggs play a crucial role in leavening non-vegan cakes, but in vegan baking, bakers must find suitable alternatives to provide the necessary rise and lightness. Baking powder, baking soda, and vinegar combinations are commonly used to replace the leavening properties of eggs.

What does apple cider vinegar do in vegan cakes? ›

The reason that you'll see apple cider vinegar or vinegar in a lot of vegan baked goods is because it helps with the leavening. It's an acid and it helps the cakes to rise.

Why do vegan cakes need vinegar? ›

I know it may seem strange to add vinegar to baked goods, but just think of it as a chemical reaction. The baking soda in your recipe needs a little acid to help it start reacting (bubbling). That's why recipes will call for things like lemon juice or buttermilk.

Why does my vegan cake crack? ›

Q: Why do cakes crack when baking? A: Oven too hot or cake placed too high in oven; the crust is formed too soon, the cake continues to rise, therefore the crust cracks.

Why is my eggless cake not fluffy? ›

Eggless cake may not come out fluffy for a host of reasons like not sifting the flour well, inactive leavening agent, improper mixing or overmixing the batter leading to deflation of air bubbles. Read my pro tips where I clearly explain these below.

Why do vegan cakes not rise? ›

In vegan cakes, the absence of the egg makes it so that it's all about taking advantage of gluten formation to build structure. This means that when you take the egg out of a cake recipe, you're going to be taking out the primary structure builder, which means that the cake is going to fall flat.

Why did my cake not fluff up? ›

Correct oven temperature is necessary to allow the cake to rise before the structure sets. If the oven is too hot, the cake will set too fast before the air bubbles have formed. If the oven is not hot enough, the cake will rise too much, then fall in the center before it is set.

How to get vegan baked goods to rise? ›

You can make your vegan baked goods rise (erupt) in a very similar way (just minus the dish soap). Simply put, you acidify a liquid ingredient in your recipe, and then add baking soda. During the baking process, the acid and the base (the baking soda) react together, and voila! you get a fluffy, light cake.
