Carnivore Diet Pancakes

Traditionally, pancakes are known as a sweet breakfast food since they are typically served with a generous amount of maple syrup. But a stack of fluffy pancakes also comes with loads of carbs and very little nutrition.

Now, you don’t have to skip pancakes just because you are following a low-carb, keto or carnivore diet. These cream cheese egg pancakes are a nutrient-dense treat everyone can enjoy. These are good for you even if you’re not watching your carbs! Children will love them.

This flourless pancake recipe is an excellent option for those who have to be gluten-free and nut-free because they contain no gluten, grains, or nuts.

The best part is that you can make them with only two simple ingredients (similar to these carnivore-friendly waffles). It doesn’t get any easier than that! Mix the batter in a blender for ultra-smooth texture and then cook in a skillet on the stove top.

One serving of these pancakes clocks in at 16 grams of protein, which is remarkable considering how simple this recipe is. Pork rinds and protein powder are not necessary here, yet the result is still high in protein, keeping you fully satiated until lunchtime.

How to Make Cream Cheese Pancakes

Gather two ingredients, and you’re halfway to making a carnivore pancake recipe in just 15 minutes!

The process is as easy as blending the two ingredients in a blender and then cooking the pancakes in a frying pan. You’ll have healthy comfort food on the breakfast table that the whole family will love.

Ingredients

  • Cream cheese – provides a rich creaminess with a lot of fat and protein.
  • Eggs – serve as a binding agent (adding more fat and protein) and unfortunately cannot be replaced with another ingredient
  • Butter – for frying, plus extra for serving

Substitutions and Variations

This pancake recipe is pretty simple but it calls for two ingredients that have an important purpose and cannot be substituted with other ingredients.

However, you can make slight diet modifications with these considerations:

  • Keto diet – add 1 tablespoon of erythritol or sugar-free sweetener of choice. You can also add some toppings to your pancakes like berries or sugar-free chocolate chips.
  • Dairy-free – Unfortunately, cream cheese is a non-negotiable ingredient. However, I can recommend dairy-free pancakes from Ash-eats as an alternative.
  • Carnivore diet – the original recipe is naturally carnivore-friendly. You can serve with honey or maple syrup, if you are eating carbs and these ingredients agree with you.
  • Low oxalate diet – the original recipe is naturally low in oxalates.

Step-By-Step Directions

Follow these simple directions, and you can’t go wrong!

All you need is a good blender, skillet, and 15 minutes of active hands-on time. The end result is a delicious breakfast reminiscent of silver dollar pancakes.

Our pancakes here are smaller in size, only about 2-3 inches across in diameter. But stack them high for that traditional pancake vibe and dig in!

Step One: Measure ingredients

Add the cream cheese and eggs to a blender.

Carnivore Pancakes Recipe with 2-Ingredients (6)

Step Two: Blend

Blend on medium-high speed until smooth and combined well. Heat the butter in a skillet over medium heat.

Step Three: Cook

Scoop the batter with a 1 tablespoon measuring spoon and pour onto the hot pan.

Cook, until the edges separate from the pan and you can easily slip a spatula under the pancake to flip it over.

Flip and cook the second side until it turns golden brown.

Remove from heat and set aside. Then, continue cooking until all the batter is done.

These are thin, so the cooking time is quick. Keep an eye on them.

Also, because they are thin you can eat a lot of them. If you’re tracking macros on carnivore, review the serving size and plan your meal prep accordingly.

For me, half a recipe pairs well with a can of wild-caught sardines and makes the perfect meal.
