Kimchi is a traditional Korean side dish of salted and fermented vegetables, such as napa cabbage and Korean radish. A wide selection of seasonings are used, including gochugaru, spring onions, garlic, ginger etc. Kimchi is also used in a variety of soups, stews and rice dishes. Fresh kimchi can be used as a salad too.
It can be prepared using normal cabbage which is easily available in Indian markets. It can be stored in the refrigerator for a few days. It is a delicious side dish prepared using a few ingredients.

Ingredients

1 medium jar
- 500 gm cabbage
- 1/2 cup spring onion cut into 1inch pieces
- 1.5 tbsp salt
- 2 tsp finely chopped ginger
- 2 tsp finely chopped garlic
- 2 tbsp soy sauce
- 1/4 cup vinegar
- 2 tsp sugar
- 2 tsp chilli flakes
- 2 tsp red chilli powder
- 2 tbsp sesame oil

Now in a bowl take 1.5 cup water and add 1.5 tablespoon salt and add the cabbage to it. Mix it well. Cover and keep it for one hour so that cabbage becomes salty and a little soft. Stir it twice in between.
